Scorzonera hispanica
Scorzonera (black salsify) is a hardy, cool-season root vegetable for full sun and deep, stone-free, well-drained soil. Direct sow in spring — roots are long and brittle, making transplanting impractical. Germination is faster and more reliable than white salsify. Thin early for straight roots and keep weed-free. The black-skinned roots take 5-6 months to mature but can be left in the ground over winter, improving in flavour after frost. Lift carefully with a fork. Easier and more forgiving than salsify, with a richer taste.
