How to Grow Greek Sage
Salvia fruticosa
Greek sage is the species used in Greek and Turkish cuisine and in most commercial dried sage products (distinct from Salvia officinalis). A bushy shrub 60-100cm tall with distinctive multi-lobed leaves that are more intensely aromatic than common sage. Slightly less hardy than common sage (to about -10C). Needs full sun, well-drained soil, and a warm sheltered position. Excellent in containers in cooler climates.

Light
Full sun essential
Needs full sun and warmth for best essential oil production and flavour. A south-facing sheltered position is ideal in the UK.
Watering
Sparingly once established
Drought-tolerant once established. Water young plants until settled, then water only in prolonged dry spells. Excellent drainage is more important than moisture.
Fertilizing
Rarely needed
Prefers poor to moderate well-drained soil. Like common sage, over-feeding produces soft growth with less aromatic leaves.
Pruning
Light trim after flowering
Trim lightly after flowering to maintain shape. Avoid cutting into old bare wood. Replace plants every 5-6 years as they become woody and less productive.
Harvesting
Pick leaves throughout growing season
Harvest leaves as needed from spring to autumn. The multi-lobed leaves have intense aroma and dry well. Best flavour comes from new growth before flowering.
Growing Tips
Warmer position than common sage
Greek sage is slightly less hardy. Give it the warmest, most sheltered spot in the garden or grow in a container that can be moved under cover in harsh winters.
Excellent drainage essential
Like all salvias, hates wet roots. Add plenty of grit to planting holes or grow in terracotta pots with free-draining compost. Raised beds ideal on heavy soil.
Harvest regularly for best flavour
Pick leaves throughout the growing season. The multi-lobed leaves are more aromatic than common sage and dry exceptionally well for kitchen use.
