How to Grow Zaatar
Origanum syriacum
Zaatar (Syrian oregano) is the culinary herb behind the iconic Middle Eastern spice blend of the same name. It is a compact Mediterranean shrublet that thrives in full sun, poor soil, and excellent drainage — the same conditions as rosemary or thyme. In temperate climates it needs winter protection or container growing to survive frost. Harvest young shoot tips throughout the season; flavour is best just before flowering. Dry bunches to make your own zaatar blend with sesame, sumac, and salt.

Care Essentials
Rarely needs feeding. Thrives in poor, well-drained soil. A light balanced feed in early spring is sufficient; excess feeding reduces flavour and essential oils.

- Root rot in wet or heavy soil
- Aphids on soft new growth
- Frost damage on young plants
Care Requirements
Light
Full sun, warm and sheltered position
Requires at least 6 hours of direct sun daily. Full Mediterranean sun is ideal. In cooler climates, grow against a south-facing wall or in a container that can be brought indoors in winter.
Watering
Low water needs; drought-tolerant once established
Water sparingly. Allow soil to dry out between waterings. Overwatering is the most common cause of failure. Excellent for dry gardens and containers with gritty compost.
Fertilizing
Little or no feeding; poor soil preferred
Grows best in low-fertility soil. Rich feeding produces lush, flavourless growth. At most apply a very light balanced feed in early spring. No additional feeding needed.
Pruning
Trim after flowering to keep compact
Cut back by about one third after flowering to maintain a tidy, bushy shape. In spring, remove any frost-damaged shoot tips back to healthy wood. Avoid cutting into old woody stems.
Spacing
40 cm between plants
Space 40 cm apart. Zaatar does not spread aggressively. In containers, a 25–30 cm pot is sufficient for a single plant.

Naturally compact and self-supporting. No staking required.
