How to Grow Sichuan Pepper
Zanthoxylum simulans
Sichuan Pepper is a spiny deciduous shrub or small tree grown for its aromatic red-pink peppercorns used in Chinese cooking. Plant in full sun and well-drained soil; it tolerates drought once established. Hardy to USDA zone 5-6. Harvest the seed pods in late summer when they split open, dry the husks, and use the pericarp as spice. Prune lightly in late winter to keep a tidy shape.

Care Requirements
Light
Full sun
Needs at least 6 hours of direct sun daily. Tolerates partial shade but crops best in a warm, sunny, sheltered spot. South or west-facing walls are ideal in cool climates.
Watering
Low once established; regular when young
Water regularly for the first 1-2 seasons. Once established, Sichuan Pepper is drought tolerant and needs watering only during prolonged dry spells in summer.
Fertilizing
Light balanced feed in spring
Apply a balanced granular fertiliser in spring as growth begins. Avoid excessive nitrogen which promotes leafy growth at the expense of fruiting. A light annual mulch of compost is usually sufficient.
Pruning
Light tidy in late winter
Prune in late winter or early spring before bud break. Remove dead, damaged, or crossing branches and lightly shape. Avoid hard pruning which reduces fruiting. Always wear thick gloves.
Spacing
1.5-2 m apart
Allow 1.5-2 m between plants for good air circulation and ease of harvest. If growing as a hedge, plant 1 m apart. Mature plants can reach 2-4 m in height and spread.
Growing Tips
Harvest the pericarp, not the seed
The aromatic spice comes from the outer husk (pericarp). Remove and discard the hard black seed inside — it is bitter and can be unpleasant. Dry husks in full sun for a day or two before using.
Handle with care — very spiny
Zanthoxylum simulans is armed with sharp paired thorns along the stems. Wear thick gloves when pruning or harvesting. The thorns make it an effective informal security hedge.
Plant two for a better crop
Plants are often dioecious (separate sexes). Plant at least one male and one female for reliable fruiting, unless you have a monoecious specimen. Some nursery plants are sold unsexed — wait for first fruiting to confirm.
Drought tolerant once established
Young plants need regular watering for the first 1-2 seasons. Once established, Sichuan Pepper is quite drought tolerant and needs little supplemental watering in temperate climates.
