How to Grow Epazote

Epazote is a fast-growing, pungent Mexican herb that thrives in warm, sunny conditions with well-drained soil. Start seed indoors 3 weeks before the last frost or direct-sow once the soil is warm (18°C+). Surface-sow — seeds need light to germinate. Pinch growing tips regularly to keep plants bushy and delay flowering; leaves lose flavour once the plant bolts. Remove flowers promptly to prevent rampant self-seeding. Add a few fresh sprigs to black beans or quesadillas during cooking for authentic Mexican flavour. Plants are drought-tolerant once established and prefer lean soil over rich compost.
