How to Grow Tiger Nut
Cyperus esculentus
Tiger nut (Chufa) is a compact sedge grown for its small, sweet underground tubers with a nutty, coconut-like flavour. Plant tubers in spring after frost in fertile, well-drained soil in full sun. Thin upright grassy leaves form quickly; tubers develop below ground over summer. Water regularly and weed well — tiger nut can struggle against competition. Lift all tubers in autumn after foliage dies back. Eat fresh, dry for storage, or blend into the traditional drink horchata. Store all tubers to prevent this vigorous plant from naturalising.

Sow indoors 6 weeks before last frost, or direct sow outdoors after frost risk has passed and soil reaches 10°C.
