Salsify (and black salsify/scorzonera) is a cool-season root crop for full sun and deep, stone-free, well-drained soil. Direct sow—roots fork if transplanted. Keep the seedbed evenly moist; germination can be slow. Thin promptly for straight, sizeable roots and keep weed-free. Lift from late autumn through winter as needed; flavour develops with cold. Handle carefully—roots snap easily. Young shoots and flower buds are also edible on some types.

Pest Aphids

Identification: Clusters of green or black insects on leaves and stems; sticky honeydew; distorted growth on young plants

Organic treatment:
  • Blast off with a jet of water
  • Spray with insecticidal soap
  • Encourage natural predators such as ladybirds and hoverflies
Chemical treatment:
  • Spray with a contact insecticide containing pyrethrins if infestations are severe
