How to Grow Salsify
Tragopogon porrifolius
Salsify (and black salsify/scorzonera) is a cool-season root crop for full sun and deep, stone-free, well-drained soil. Direct sow—roots fork if transplanted. Keep the seedbed evenly moist; germination can be slow. Thin promptly for straight, sizeable roots and keep weed-free. Lift from late autumn through winter as needed; flavour develops with cold. Handle carefully—roots snap easily. Young shoots and flower buds are also edible on some types.
When to Start
Direct sow outdoors as soon as soil reaches 7°C — typically early to mid spring. Hardy enough to tolerate light frosts.

Care Essentials
- Light balanced feed at sowing. Avoid fresh manure — causes forking.
- Known as the 'oyster plant' for its subtle flavour. Slow-growing — sow early. The purple flowers are also edible.

Pests & Diseases
Pest Aphids
Identification: Clusters of green or black insects on leaves and stems; sticky honeydew; distorted growth on young plants
- Blast off with a jet of water
- Spray with insecticidal soap
- Encourage natural predators such as ladybirds and hoverflies
- Spray with a contact insecticide containing pyrethrins if infestations are severe
Pest Slugs and Snails
Identification: Seedlings eaten at ground level; ragged holes in young leaves; slime trails on soil
- Apply organic slug pellets (ferric phosphate based) around seedlings
- Hand-pick at dusk; use beer traps
- Keep the area around plants clear of debris where slugs shelter
- Apply ferric phosphate slug pellets around vulnerable seedlings
Disease White Blister Albugo tragopogonis
Symptoms: Raised white pustules on leaf undersides; corresponding yellow patches on upper surfaces; distorted growth in severe cases
Treatment: Remove and destroy affected leaves; improve air circulation
Prevention: Avoid overcrowding; ensure good airflow; rotate crops; remove plant debris at end of season
Disease Powdery Mildew Erysiphe spp.
Symptoms: White, powdery coating on leaves; affected leaves yellow and die back; reduced vigour
Treatment: Remove badly affected leaves; spray with a sulphur-based fungicide or potassium bicarbonate solution
Prevention: Space plants for good airflow; water at the base; avoid overhead watering
